Recipe: Healthy Holiday Cranberry-Apple Crisp Delight

Filling:

3 cups cubed Granny Smith apples

2 cups fresh cranberries

½ cup sugar

2 Tablespoons finely grated lemon or orange rind

Cooking spray

 

Crumb:

1/3 cup whole-wheat flour

1 cup regular oats

½ cup packed brown sugar

2 Tablespoons wheat germ or oat bran

½ teaspoon cinnamon

½ teaspoon nutmeg

¼ cup canola oil

 

Preheat oven to 350 degrees. Combine first 4 ingredients in a medium bowl, spoon

mixture into an 8-inch square-baking dish coated with cooking spray. Combine flour, oats,

brown sugar, wheat germ, cinnamon, nutmeg, and oil, stirring with a fork until crumbly.

Sprinkle over apple mixture. Bake at 350 for 40 minutes or until bubbly.

Yields 10 servings. Serving size: ½ cup
