Spruce up a salad by adding a handful of mache, a sweet, nutty-tasting green also known as lamb's lettuce or corn salad, according to Purdue University. Besides being sold as an individual green, mache also is often included in mesclun, a mix of tender young greens. A 3-ounce serving of mache has just 20 calories and contains vitamins A and C.
